<font size="2" face="Verdana, Helvetica, sans-serif">As long as you know which tabs to connect the wires to, I figure you should be able to use the 5-way as a 3-way. I've never tried this myself though, since I've never had to fiddle them. All my guitars had 3-way switches in them (or no switches at all).
