High E string when fretted at the 11th fret buzzes, but none of the other strings do it on the same fret. Goes away when action is high. What it, how can I fix it?

I think you half-answered you question.
Shim your saddle. That should take care of it.
Use some thin brass stock. Or even a part of an automotive feeler gauge. (My personal fav as it has different thicknesses) -

Or possibly the fret is raising slightly on the E string side...
Check to see if its unseating it self..
if not..
Get a straight edge and check 11 & the adjacent frets.
(10 11 & 12)
There may be one of those higher causing the 11th fret to squeak.
