I agree with everything DG said except for the part about chemical paint stripper not working on poly, it does.
BUT, ANYWAY, there's very seldom any reason to use stripper on a guitar unless it's going to get a trans or natural finish of some sort.
If you're going to paint it an opaque color let the original poly finish be your friend.
