You can order them with any neck/body wood combo you want, but the standard Holdsworth is alder body with alder neck, and the Fatboy is alder body with maple neck.

Does this mean, that Allan Holdsworth actually plays the alder models - instead of the other options like Walnut or Maple-Tops?

I believe so, since that's what he spec'd out with Carvin. Though, he does have some with maple tops. He might have some with other options as well, but I'm not sure.
