what in your guys opinion is the best readily available 7 string guitar...new or used?

Production guitar wise/readily available, I'd say a Schecter or Ibanez

I don't know if counts as "readily available," but the Carvin sevens are pretty nice.

By far the two best readily available 7's are the Ibanez Universe and the Ernie Ball/Music Man JP7. Those two sit alone at the top of the hill; then come the Carvins.

failing that any longer scale ibanez (may not be readily available though, might as well go jackson custom or jackson stars custom)
