So I ended up buying this and it arrived today. Question - it a two-way toggle instead of 3-way?

Congrats! It strikes me as odd that it's a three-pickup guitar (HSS) but it has what looks like a 3-way switch.

thanks. It should be a 3-way toggle (assuming each position for each of the pickups) but it's definitely a 2-way toggle in there. May have been the previous owner?
Anyways, will need to pick up a 3-way toggle just not sure on how to wire it up? I'm familiar with the 3-way toggle with 2 pickups, not with three pickups?

I played that one at the SJ GC about a month ago. It seemed the toggle was broken as it was really hard to switch it to any position.

I'd suggest you install a standard 3 toggle to switch between the neck and bridge, and then install a push-pull volume pot to switch in/out the middle pickup. That's how PRS had their Swamp Ash Special model setup.
