Strange question, ...maybe

Suppose I wanted to keep the current pickup in my guitar, but instead of all black, I wanted a zebra. Is it possible to just replace the top plastic piece over the coils rather than replacing the entire pickup?

Negative. The bobbins are molded entirely in one piece. You would have to disassemble the pickup and rewind a bobbin in the cream color. A lot of work in assembly.
