Use 250K's for single coil pickups
    Use 500K's for humbuckers
Use 25K's for active pickups (EMG's)

    Audio taper

    Thats about it.

250k pots are typically used for single coil pickups.
500k pots are typically used for humbuckers.

Excuse my ignorance but, what if you have both types of p/u's? Like, say an SL1 setup for example.

Use a 500K if you are mixing pickups and the humbucker is in the bridge.

Ok> I have a question. If the pot does not have a K reading on the body, how do you test it to determine the value? I have a meter, but how do I test it? Thanks

Measure on the outer pins for total ohm.

You also need to know if it's logarithmic or linear.

Well these are old CTS and Stackpole pots that are already loaded on pickguards. Would they use both types?

Usually Audio pots are used for volume, and linear pots for tone controlls.
If you check the pots, you can usually find an "A" for audio, and an "L" for linear stamped on it somewhere.

That's what I have in two HB/SC guitars and it works fine for me, but some think it makes the single coils too bright in some guitars. I have another H/S/S project guitar I'm working on and I'm going to use a 400K volume pot in that....on paper that seems like it should be a good compromise, but I'll have to see what it ends up sounding like.
