What do I use to file the grooves and smooth them all out?
8 strings? Because 6 is too easy?

It's better you use a diamond file. BUT it can be done with a regular file and sandpaper. Don't forget to coat it with some kind of finish, to avoid corrosion... lacquer, nail polish, even super glue in thin and regular coats. But if you permit, with the prices os parts nowadays, the correct thing to do is to replace it. Keep in mind, if your nut height is already low, filing the grooves will bring the string height lower; maybe you'll need to shim the base of the entire locking nut to compensate for the material you removed. Is it worth?
BTW, be aware about the size and radius of your locking nut if you're replacing it; there are lots and lots of variations.
