so, I have been watching Pual Gilbert and Jeff Beck play recently, and i noticed they have an odd nut. It looks like a floyd shelf without the holes for the clamps. Can anyone help me please?

Jeff Beck's Stratocaster has an LSR roller nut. That's probably what you're seeing.
